Wagyu
What is Wagyu?
Wagyu simply means Japanese Cow. Wagyu beef refers to specific breeds of cattle in Japan which have a far superior genetic composition than any other beef. It is known for its heavy intra-muscular fat marbling, melt in the mouth tenderness, luxurious juiciness and well balanced, rich and umami flavours. All wagyu is graded using the Beef Marbling Score Scale (BMS) which assesses the intramuscular fat marbling and ranges from 1-12 with 12 being the highest. Additionally, all Japanese Wagyu is also graded based on yield rating (A-C) and quality rating (1-5) with A5 being the highest grade. Wagyu is the most luxurious and finest beef in the world often only graced in the highest end Michelin star restaurants'
